Looking for Recipe To all the awesome cooks... I'm trying to locate a particular receipe. It was in "Everyday Food" but I can't find it. It was a Penne with Broccoli, and in some sort of Tomato Sauce with Cheese on top. On the side, it had Breaded Chicken.. Anybody know?
Given the ingredients you describe I would: Finely chop one onion Grate one small carrot Finely chop one stick celery - saut these gently for 3-4 minutes in a couple of tablespoons of oil (I'd use olive oil). Be very gentle in the cooking and avoiding browning the vegetables. Then add tomatoes: a 14oz can - chopped (or sieved if preferred seedless) [I actually use a product called Creamed Tomatoes ... similar to passata]. Bring to a gentle simmer and season well with sea salt and freshly ground black pepper. Rip up a good bunch of fresh basil leaves and add to the sauce along with a pinch or two of sugar ... check the flavour for seasoning. Depending on the tomatoes used you might want to thicken and enrich the sauce by simmering it continuously until it reduces in volume a little. This will make it thicker and richer tasting, so take care with seasoning until you decide the cooking is complete. Meanwhile cook the penne until al dente and blanch the broccoli florets, for 2 minutes, in plenty of well salted water that has been brought to a rolling boil. Add the cooked pasta to the tomato sauce and then add the broccoli and combine the mixture in a suitable oven proof dish. Sprinkle the top with grated cheese. I'd go with what I had to hand (cheddar), but chunks of mozarella or even ricotta would be good. If you have other herbs available you might consider adding a little chopped oregano or thyme. But don't go mad with adding too many flavours. The cheese topping can be given a nice crunch by sprinkling over a good handful of crushed potato chips. Finally cook off in a hot oven for 20 minutes or until the topping is bubbling hot.
